Maple Roasted Delicata Squash & Red Onion

Delicata squash has to get its name from the fact that it is worthy of being called a delicacy! It is my absolute FAVORITE kind of squash and it only makes its way to the grocery for a few weeks each year.

That means, when it is in season I am eating it CONSTANTLY and every single time I make it the way I’ve listed below.

I recommend taking full advantage of Delicata squash season…you won’t regret it!

And if they are not available at the market/store, you can easily replace it with butternut squash or sweet potato.

PS - Eat your Maple Roasted Delicata Squash & Red onion as a side dish with just about anything, or try one of my favorite combos…

  • Mixed with cooked, sliced sausage or beef hotdog (be sure to check for meet quality! Opt for grass-fed, hormone- and nitrate-free as much as possible!)

  • On top of a bed of lettuce

  • Used as pizza toppings

  • Mixed with sautéed kale

INGREDIENTS:

  • 2 Medium Delicata Squash

  • 1 Medium Red Onion

  • ~ 2 T Avocado Oil

  • ~ 1 T Maple Syrup

  • 2 t Rosemary

  • Pink Himalayan sea salt

 

INSTRUCTIONS:

  1. Preheat the oven at 425 degrees F

  2. Place chopped Delicata squash, red onion, Rosemary, Avocado oil, and maple syrup into a large bowl and mix well

  3. Spread vegetables evenly on a large cookie sheet (or two) and sprinkle generously with Himalayan sea salt

  4. Place in the oven for ~ 15 minutes, flip/stir around, and leave in oven for ~ 15 more minutes or until the squash is tender and browned

  5. Remove and enjoy!
