Paleo {Cows} In a Blanket

Growing up I consistently gravitated towards the hot dogs, corn dogs, and things of the like on food menus and at the grocery store. Oh and if I was going to the ballpark getting a ballpark hot dog was one of the best parts about going to a baseball game. Once I developed various food intolerances and did research about food I no longer ate those “American classics” but that did not mean I have not missed those kinds of things…

Once I stumbled upon Teton Waters Ranch sausages and hot dogs that craving was fulfilled!

My favorite product I’ve tried (and buy consistently) are the grass-fed beef Polish Sausages. Typically I grill them whole, or cut them up and cook them with veggies in a cast iron skillet or on a baking sheet.

I decided it was time to switch things up and get a little creative. So in effort to channel a childhood favorite, these Paleo {Cows} in a blanket were born!

I hope you enjoy them as much as me!

Ingredients:

  • 1 pack of Teton grass-fed beef Polish Sausages (or any hot dogs. You’ll want 4)

  • 1/4 cup almond flour

  • 2 TBSP coconut flour

  • 1/4 cup + 2 TBSP arrowroot flour

  • 1/4 tsp baking powder

  • 1/2 tsp sea salt

  • 1 & 1/2 TBSP olive oil

  • 1/4 cup water

Instructions:

  1. Preheat your oven at 425 degrees & line a baking sheet with parchment paper

  2. Mix together dry ingredients, then add the liquids

  3. Separate the dough into 4 even-sized balls

  4. Roll/pinch dough to form for strips of dough, then gently press to flatten the dough*

  5. Wrap each sausage in dough

  6. Bake for 20 minutes

  7. Remove and enjoy!

*Recipe Tip: I find it best to to begin to turn the balls of dough to form a hotdog shape. Then set it on the parchment paper and using a pinching motion to extend the dough into a strip. Once it is spread out, gently press the dough down so that it is flat.
