Buffalo Cauliflower Bites (Dairy & Gluten Free)

Buffalo wings are a classic recipe, and for good reasons — the flavor is literally finger-licking good!

Three years ago I realized that chicken does not agree with my GI tract, so while I’ve journeyed through my healing process I’ve had to find alternative recipes to satisfy cravings for things such as chicken wings.

And while I’ve experimented with very clean chicken, wings have not been one thing I will be lenient on. There are often a dozen unnecessary ingredients that go into the making of buffalo chicken wings, making them even less ideal. To the drawing board…

Thanks to the cauliflower craze, there was buzz about buffalo cauliflower bites. As with chicken wings, the pre-made and pre-packaged bites are filled with extra stuff that I do not really want on my plate or in my body. To my disappointment, many recipes also did not meet my expectations so naturally I decided to just whip up my own and wowza…I made them for like five days in a row the first time I made them.

I say it constantly, that the kitchen is my canvas and I encourage you to make it yours too! Never be afraid to experiment in the kitchen. It is SO satisfying to crease something delicious! That’s exactly what happened with this creation, and to my surprise many people wanted the recipe. So after being asked by multiple people I figured I would actually measure out the ingredients and make a blog post about it.

INGREDIENTS

  • 2 - 3 heaping cups of chopped cauliflower (use less if you want them more saucy)

  • Avocado oil

  • 1 serving of buffalo sauce (recipe below)

BUFFALO SAUCE

Mix the following ingredients in a small glass bowl of coffee mug. Cover and microwave in 10-15 second increments until completely melted.

  • 4 T Frank’s Red Hot Sauce

  • 1 1/2 t ghee

  • 1/2 t garlic powder

  • Cracked pepper

INSTRUCTIONS

  1. Preheat the oven at 400 degrees and drizzle a cookie sheet with avocado oil

  2. Chop cauliflower and toss with the avocado oil on the cookie sheet until evenly spread

  3. Roast for 30 minutes, stirring/flipping at least once around 15 minutes

  4. Meanwhile, mix and warm the buffalo sauce

  5. Remove cauliflower from oven and drizzle then toss in buffalo sauce

  6. Place coated cauliflower back in the oven for ~10-15 minutes. Cook longer until desired crispiness is achieved.

  7. Remove from oven and chow down!

NOTE: It is super easy to double this recipe if you want to make more! Also, you can line the cookie sheet with parchment paper to reduce clean up time.
